Hey RavenTheBranwen, The economy fluctuates during the prison season and it is sometimes tough to keep up with the demand. It all depends on what is being bought and sold during that certain time. Majority of money income does come from grinding the mines so that is an easy way to get some quick cash. Owning a profit shop or just an average shop can definitely help make some money as well.
