Hey there, That's something you could suggest using the Community Tickets. There's a higher chance that the Community Events Team will see and think about there through them. It's not a bad idea, but they usually do PvP Events on ArenaPvP (which is more related to PvP than SkyBlock). SkyBlock also has those scheduled events such as the Envoys and Boss events. That's just my opinion, you can still submit a Community Ticket with your ideas and let the Staff Team know about it! :D
Hi PlayerUnbound! Like sadbaby said, multiple servers have PVP based events. I don't even particularly enjoy PVP in minecraft servers (Because I suck at them and always lose my stuff haha) but even I found the boss battles to be incredibly fun. If you haven't tried it out on the skyblock servers, I would highly recommend those as they are frequent and you will find at least one a day if you play for a while. Hope this helped!
