I designed a fully automatic AFK-able peaceful pillager farm. If you get a pillager to shoot at a target (a villager in this case) for long enough, then its crossbow will eventually break and it will become completely peaceful. This process takes about 15 IRL minutes, at which point the pillagers will be dropped into nether portals for easy transport and a new load will be grabbed for pacification.
